I tried some gluten-free cookies a few days ago and found them to be a lot better than I had expected
I’m not surprised that gluten=free cookies would be good, because cookies don’t “use” gluten. Their chewiness, when it’s there, is due to moisture content and sugar. Gluten is developed in bread dough, usually by kneading, to give it that desireable chewiness.
while it is true that the working of the dough enhances the gluten in bread there is already gluten in wheat flour, to name but one, so the only way to avoid gluten on cookies is to leave out the wheat flour and use something like rice or gluten-free oats instead
Quite so, it’s there whether you develop it or not. I was looking at the wiki, and it says, more precisely, that there are gluten precursors in the flour (and more or less, depending on the exact kind): gliadins (3 types) and glutenins. Seems it’s the insoluble gliadins that are the main problem for coeliac disease.

Hi dar. I was out ‘gardening’, that is to say retransplanting from the backyard plants I’d had to take out of the front because of that major street-and-services dig-up last year. It lasted 6 months (!), and is almost finished. One coat of asphalt left, and some sidewalks, but not in my segment.
